Raspberry And Yoghurt Gin Zoom Lollies
These sweet summery treats are incredibly easy to make and full of fun. The raspberry notes of fresh fruit are enhanced by a touch of Whitley Neill Raspberry Gin giving these ice pops a proper adult touch.
- 150g raspberries
- 100g caster sugar
- 1 tsp vanilla extract
- 20ml Whitley Neill Raspberry Gin
- 500g low fat natural yogurt
- 100g white chocolate, melted
- 60g hundreds and thousands
Put the raspberries, caster sugar, gin and vanilla extract in a bowl and crush the raspberries with the back of a fork until roughly broken up. Mix in the yogurt and stir gently until the sugar has dissolved. Pour into ice-lolly moulds and freeze for 6 hours or overnight.
Once frozen, dip the tips of the lollies into melted white chocolate, then dip quickly again into the hundreds and thousands, the mix will set almost straight away. Then dance around like you were 6 years old again!
