Orange And Maple Glazed Chicken
A super simple but totally delicious BBQ chicken recipe that the whole family will love. The sweet and savoury flavours of this dish are so Moorish so you should double the recipe as it’s great cold too. The obvious choice of gin here is the Whitley Neill Blood Orange Gin with some rosemary and orange slices to compliment the marinade. A simple green salad is all you need to go with this.
- 4 large chicken breasts , skin on about
- 3 tbsp maple syrup
- 1 tbsp wholegrain mustard
- grated zest of 1 orange
- 4 sprigs of fresh rosemary
- 3 cloves of garlic, roughly chopped
- 1 tsp coriander seeds crushed
- 1 tbsp soy sauce
Make several diagonal slashes across each chicken breast. Put all the other ingredients into a wide shallow bowl and mix them together well. Add the chicken breasts and turn them in the mixture until they are really well coated then cover the dish with cling film and chill the chicken for at least a couple of hours but overnight is best .
Light the BBQ and get the coals nice and hot. Cook the chicken for 5-6 minutes until the skin is nice and golden and crispy, turn once and brush over more marinade as you go. Keep turning and basting the chicken until it is browned and glossy. Right at the end you can throw some extra rosemary on the coals to give it some extra smoke. This is a great tip. Serve the chicken with a simple salad or your favourite rice recipe.
