Blood Orange Gin And Tonic Granita
This frozen G&T granita is fabulously sweet and fresh. It is suited to being a palate cleanser mid course for your next dinner party or as a light desert on warm summer days.
- 100ml of water
- 200g of caster sugar
- 150ml of Whitley Neill Blood Orange Gin
- 500ml of tonic water
- 2 oranges, juiced
- Mint sprigs
Heat the water with the sugar for about 5 minutes until dissolved. Add the gin, orange juice and tonic water and pour into a freezer-proof container. Cool to room temperature, then freeze for 2 hours, whisking after the first and second hour. Before serving, break up the granita with a fork to give it a softer texture. Serve topped with mint sprigs.
